1/4 c. raisins
1/4 c. pineapple juice
2 c. finely grated carrots
3/4 c. chopped pineapple
Soak the raisins in the pineapple juice while the carrots are being prepared. Grate the carrots using a fine grater.
Combine carrots with the soaked raisins and chopped pineapple. Chill before serving.
