Do I Have to Roast the Squash First

How to Properly Store and Reheat Leftovers

This soup is fantastic for meal prep, as the flavors continue to meld and deepen overnight.

To store it, allow the soup to cool completely to room temperature.

Then, transfer it to an airtight container and refrigerate for up to 5 days.

Can you freeze it?

Absolutely.

This soup freezes beautifully.

Pour the cooled soup into freezer-safe containers or bags, making sure to leave about an inch of space at the top for it to expand.

It will keep well in the freezer for up to 3 months.

To reheat: Gently warm the soup in a saucepan over medium-low heat, stirring occasionally until it’s heated through.

You can also microwave it, but I find stovetop reheating gives a better result.

If the soup has thickened, you can add a splash of broth or water to reach your desired consistency.
