On top of that, you’re getting all the benefits of pumpkin. It’s loaded with beta-carotene, which the body converts into Vitamin A, essential for vision and immune function.

  • Maple Syrup: Pure maple syrup lends a wonderful, nuanced sweetness and classic autumn flavor. You can substitute with honey or agave if you prefer. For a lower-sugar option, a monk fruit-based maple syrup substitute works well without leaving a chemical aftertaste.

  3. Scrape and Re-Blend: Stop the blender, use a silicone spatula to scrape down the sides of the container, and then blend for another 30 seconds. This crucial step ensures you don’t have any un-blended bits of cottage cheese, guaranteeing a perfectly uniform, creamy texture throughout.

  • Healthier Crunch: For a more savory and fiber-rich option, try whole-grain crackers, pretzels, or even rice cakes. If you’re looking for another clever way to pack in more veggies, you can even serve this with crispy bell pepper “chips.”

  • Oatmeal Swirl: Add a generous dollop to your morning bowl of oatmeal or overnight oats for a boost of flavor and protein.

Ingredients:

  • 16 oz (2 cups) full-fat cottage cheese
  • 1 cup pumpkin puree (100% pure pumpkin)
  • ⅓ to ½ cup pure maple syrup (adjust to your desired sweetness)
  • 1 tsp vanilla extract
  • 1.5 tsp pumpkin pie spice
  • ½ tsp ground cinnamon

Instructions:
