  • Sunflower Seeds: ¼ cup, preferably raw and unsalted so you can toast them yourself for the best flavor.
  • Shallot: One small shallot, finely diced. It provides a milder, more delicate flavor than red onion.

For the Creamy Dressing

  • Plain Greek Yogurt: ⅔ cup. Use full-fat or 5% for the creamiest result.
  • Mayonnaise: Just 1 tablespoon adds a familiar richness. I prefer one made with avocado oil.
  • Honey: 2 tablespoons for a touch of natural sweetness. Maple syrup is a great vegan alternative.
  • Apple Cider Vinegar: 1.5 tablespoons for that tangy kick.
  • Dijon Mustard: 1 tablespoon adds complexity and helps emulsify the dressing.
  • Olive Oil: 1 teaspoon, for massaging the kale.
  • Salt & Pepper: To taste.
