Why Is Everyone Making Ice Cream With Cottage Cheese Anyway?

The sudden rise of cottage cheese from a simple diet staple to a viral dessert ingredient isn’t just social media hype; it’s rooted in solid nutritional science.

As a dietitian, I appreciate its powerful profile.

Cottage cheese is packed with high-quality protein, specifically casein and whey.

A 2018 study in the American Journal of Clinical Nutrition highlighted that casein protein digests slowly, which helps you feel fuller and more satisfied for longer.

This makes it an ideal ingredient for a dessert that actually curbs your hunger.

Beyond protein, it’s a nutritional powerhouse.

According to the USDA FoodData Central, a single cup of 4% milkfat cottage cheese provides about 24 grams of protein and is a significant source of essential nutrients like calcium for bone health, phosphorus, and Vitamin B12, which is vital for nerve function.

By using it as our ice cream base, we’re not just cutting sugar; we’re actively adding beneficial nutrients.

What You’ll Need for This Perfect Pint

What You

Getting the texture right is all about using the right ingredients.

Each one plays a specific role in creating that perfect creamy, rich flavor.

Here’s what you’ll need and why it works.

Ingredients:• 1 cup (220g) Full-Fat Cottage Cheese: Don’t substitute with low-fat here!

Food science tells us that fat is crucial for a creamy mouthfeel in frozen desserts.

It coats ice crystals and keeps them small, resulting in a smoother texture.

I recommend Good Culture or Daisy 4% for their excellent flavor and consistency.

1/2 cup (120ml) Fairlife 2% Milk: This milk is ultra-filtered, which concentrates the protein and reduces the sugar.

You can use any milk, but this gives it a little protein boost.

• 2 tbsp (30g) Honey or Maple Syrup: Provides natural sweetness.

You can adjust to your preference or use a sugar-free alternative like allulose or monk fruit sweetener.

2 tbsp (15g) Unsweetened Cocoa Powder: For a deep, rich chocolate flavor.

• 2 tbsp (18g) Chocolate Sugar-Free Instant Pudding Mix: This is the secret weapon.

The starches in the pudding mix act as a stabilizer, preventing the ice cream from becoming icy and ensuring a scoopable texture.

1/2 tsp Vanilla Extract: Enhances the chocolate flavor.

*A Pinch of Salt: Balances the sweetness.

As your dietitian, I can confirm this combination delivers a dessert that supports your wellness goals without feeling like a compromise.

Your Step-by-Step Guide to Perfect Creaminess

The Ninja Creami does most of the work, but following these steps precisely is the key to a flawless texture.

Don’t be tempted to skip the blending step!

Step 1: Blend the Base Until Silky Smooth Combine all ingredients (cottage cheese, milk, honey, cocoa powder, pudding mix, vanilla, and salt) in a blender.

A high-speed blender like a Vitamix is ideal, but a standard blender or immersion blender will also work.

Blend for 60-90 seconds, or until the mixture is completely and totally smooth.

Scrape down the sides to ensure no cottage cheese curds remain.

This is the most important step for a non-gritty texture.

Step 2: Freeze for 24 Hours Pour the smooth chocolate mixture into your Ninja Creami pint container.

Secure the lid and place it on a level surface in your freezer.

Freeze for at least 24 hours.

The base must be frozen completely solid for the Creami to work its magic.

Step 3: The First Spin Once frozen, remove the pint from the freezer, take off the lid, and place it in the outer bowl of the Ninja Creami.

Secure the processing lid and lock it into the machine.

Select the ‘LITE ICE CREAM’ function and let it run through one full cycle.

Step 4: Re-Spin for Creaminess After the first spin, the mixture will likely look dry and crumbly.

This is normal!

Add one tablespoon of milk directly to the center of the mixture.

Place it back in the machine and press the ‘RE-SPIN’ button.

Step 5: The Final Touch After the re-spin, your ice cream should be thick, creamy, and smooth.

If it’s still a little crumbly, add one more tablespoon of milk and run the ‘RE-SPIN’ cycle one last time.

It will transform into a perfectly scoopable, soft-serve-like consistency.

Enjoy it immediately!

Is This Ice Cream Actually Healthy?

Is This Ice Cream Actually Healthy? related image

In the world of nutrition, ‘healthy’ can be a loaded term.

So let’s look at the facts.

Compared to a serving of premium store-bought chocolate ice cream, which can easily contain 300+ calories and over 25 grams of added sugar, this entire pint of cottage cheese ice cream has about 390 calories, 18 grams of sugar (mostly from the milk and honey), and an impressive 33 grams of protein.

The American Heart Association recommends limiting added sugars to no more than 25 grams for women and 36 grams for men per day.

This recipe can easily fit into that guideline while providing a substantial amount of protein, which traditional ice cream lacks.

So, is it healthy?

I would call it ‘health-promoting.

‘ It satisfies a desire for a sweet, creamy dessert while delivering significant nutritional benefits, particularly protein and calcium.

It’s a fantastic tool for managing cravings and an excellent post-workout treat to help with muscle repair.

It’s a smart, delicious swap that allows you to enjoy a treat without the nutritional trade-offs of regular ice cream.

Ways to Customize Your High-Protein Treat

Once you’ve mastered the basic chocolate recipe, you can get creative.

The ‘MIX-IN’ function on the Ninja Creami is perfect for adding texture and flavor after your ice cream is smooth.

Just make a small well in the center of your creamy ice cream, add your toppings, and run the ‘MIX-IN’ cycle.

Flavor Variation Ideas:• Strawberry Cheesecake: Swap the cocoa and chocolate pudding for vanilla pudding mix.

Blend in 1/4 cup of fresh strawberries with the base.

After spinning, mix in crushed graham crackers.

Peanut Butter Cup: Use the main chocolate recipe.

After spinning, use the mix-in function to add a tablespoon of natural peanut butter and some chopped dark chocolate peanut butter cups.

• Mint Chocolate Chip: Use a vanilla base (vanilla pudding instead of chocolate, omit cocoa).

Add 1/4 teaspoon of peppermint extract to the base before freezing.

After spinning, mix in dark chocolate shavings.

Make it Higher Protein: Add half a scoop of your favorite chocolate or vanilla protein powder to the base before blending.

You may need to add an extra splash of milk to get the right consistency.

Conclusion

You don’t have to choose between satisfying your sweet cravings and sticking to your health goals.

This cottage cheese ice cream is proof that you can have it all: a delicious, rich, and creamy dessert that’s packed with protein and easy to make.

It’s a fantastic way to enjoy a guilt-free treat any night of the week.

So go ahead, dust off that Ninja Creami, and get ready to discover your new favorite ice cream.

I’d love to hear what creative mix-ins you come up with!
